We use the Saleae 16 to test our software and hardware designs but we are not python coders ourselves. Can you recommend anyone who could do this for us please?

this link will get you started, as the awesome cool folks from Saleae have some MIDI Analyzer code already:
There are also a bunch of MIDI Analyzers out in the git world, so you may not need to write anything.
